DIABETIC CHOCOLATE CHEESE CAKE
FROM THE KITCHEN OF MY NANA BRENDA:
I’D LIKE TO TAKE A MOMENT TO INTRODUCE MYSELF. For the past ten
years, I’ve dedicated my career to the field of Gerontology. I
received masters in Gerontology and have worked in Independent
retirement communities, assisted living, and skilled nursing centers
and in adult day care. I’ve also been a support group leader,
private caregiver and presently oversee the care for several of my
relatives. With a passion education, I spend a lot of time educating
people OF ALL AGES online. With the permission of the moderator, I’d
like to share my insight with the group. Please feel free to email

Here is one of my favorite recipes.
DIABETIC CHOCOLATE CHEESE CAKE
1 (5.25) PACKAGE OF SUGAR FREE CHOCOLATE GRAHAM CRACKERS, CRUSHED1/3
CUP OF REDUCED CALORIE MARGARINE, MELTED
¼ TEASPOON OF GROUND CINNAMON
1 ENVELOPE OF UNFLAVORED GELATIN
1 CUP OF FAT FREE MILK
COOKING SPRAY
2½ (8 OZ) PACKAGES OF LITE CREAM CHEESE SOFTENED
2 TEASPOONS VANILLA EXTRACT
¾ CUP PLUS 2 TABLESPOONS OF EQUAL OR OTHER SWEETENER OF CHOICE
¼ CUP OF UNSWEETENED COCOA
5 SUGAR FREE CHOCOLATE WAFER BARS, COARSELY CHOPPED
COMBINE FIRST 3 INGREDIENTS, BRISKLY AND PUT THE MIXTURE ASIDE.
SPRAY THE SPRING FORM PAN WITH COOKING SPRAY AND COMPRESS THE
MIXTURE INTO BOTTOM OF THE PAN, (1 INCH THICK).
BAKE AT 350 DEGREES FOR 8 MINUTES. REMOVE FROM HEAT AND LET IT COOL
ON AWIRE RACK.
SPRINKLE GELATIN OVER THE MILK IN A SMALL SAUCEPAN AND LET IT STAND
FOR 1 MINUTE. AFTER THAT COOK IT OVER LOW HEAT, STIRRING UNTIL
GELATIN DISSOLVES. (ABOUT 2 MINUTES). LET IT COOL SLIGHTLY.
BEAT CREAM CHEESE AT MEDIUM SPEED WITH AN ELECTRIC MIXER UNTIL IT IS
CREAMY. ADD VANILLA. ADD THE GELATIN AND MILK MIXTURE, BEATING
UNTIL SMOOTH. ADD SUGAR SUBSTITUTE AND COCOA.BEAT THE MIXTURE JUST
UNTIL IT IS BLENDED. POUR MIXTURE INTO PREPARED CRUST. TOP IT WITH
CHOPPED WAFERS. COVER AND CHILL FOR AT LEAST 3 HOURS OR UNTIL SET.
