Thanks for the suggestions concerning adapting the broccoli cassarole.
How would I make this diabetic friendly?
Broccoli Casserole
2 (10 ounce) packages frozen broccoli or fresh broccoli
2 eggs, beaten
1 onion, chopped
1 cup chopped celery
2 cans cream of mushroom soup 2 cans cream of celery soup
1 cup mayonnaise
1 cup sharp Cheddar cheese, cubed
1 package herbed stuffing mix
1/2 cup butter, melted
Cook broccoli until tender. Combine eggs, onion, celery, soup, and
mayonnaise. Place layer of broccoli in a 3-quart casserole dish. Add layer
of cheese, then a layer of stuffing mix. Pour a small amount of sauce over
top. Repeat layers until all of ingredients are used. Top with a layer of

with taking care of my diabetes, after going
to the doctor for a nasty case of bronchitis. (The coughing is
nearly gone, but have had laryngitis for a week now–frustrating!!)
The average on my glucose monitor is 141. Can’t wait to get my
energy back so I can return to exercise! The doctor put me on
metformin and Pravachol.
Recently told my boyfriend about the diabetes, and have struggled a
bit with his being the food police. In some ways, I’m glad I told
him, as he’s looking at things differently when he goes to the store
for me. I’ve had to remind him about moderation for me, and making
choices. I also assured him that he could continue to eat whatever
he wants, without feeling guilty about making me feel bad or left
out. The news scared him at first, as it did me when I was first
diagnosed, but he seems better now.

does anyone know if there is a chart or program to figure out how much
insulin to use. i know what the doctor told me, but that is too much sometimes.

How in the name of little green apples can anyone think that this is
suitable for diabetics? I suppose one might be able to fiddle with it by
using a mixture of whole wheat and bean or nut flours, but as it stands. . .

Dumplings are an easy and delicious addition to simmering soups or stews.
1 1/2 c. flour
2 tsp. baking powder
3/4 tsp. salt
3 tbsp. minced parsley or chives
