Flaxseed Bread
It was delicious, and didn’t raise my BS.
For those who asked for the rec., here it is:
1 1/2 cups water
2 tablespoons each honey, molasses, and olive oil
4 cups whole wheat flour
2 to 3 tablespoons gluten powder (more if the flour is very coarse-ground)
2 teaspoons salt
1 cup flax seeds
1 tablespoon yeast
Place ingredients in your bread machine in the order recommended by your
manufacturer and set on ‘wheat’ and ‘medium crust’.
(For those of you who make your bread the ‘old fashioned way’, my father [also
diabetic!] is experimenting to get a non-machine adaptation. When he gives it
to me, I’ll post.)
[If you want to make rolls or buns, rather than a loaf, use the ‘dough’ cycle,
then knead and shape the buns/rolls and finish in the oven.]
Does anyone have other suggestions on how to use flax seeds?
