FWD: Blueberry Cobbler

Easy Diabetic Blueberry Cobbler
Preparation Time: 15 minutes
Servings: 6
INGREDIENTS
3 cups Fresh Blueberries
Vegetable Cooking spray
1 tbsp Lemon Juice
1 egg, beaten
1 cup all-purpose flour
Sugar substitute equal to 1-1/2 cups regular sugar
1/4 cup + 2 tbsp reduced-calorie margarine, melted
DIRECTIONS
1.Place blueberries in bottom of a 10 x 6 x 2 baking dish coated with
cooking spray. Sprinkle dish with lemon juice.
2.Combine egg, flour, and sugar substitute. Stir until mixture resembles a

coarse meal. Sprinkle over the blueberries. Drizzle melted margarine over
the top.
3.Bake at 375 degrees F for 30 minutes. Serve warm.
