Halibut Stir-Fry

Yield: 1 servings
2 ts Sesame oil -asparagus cuts, thawed and
1 lb Halibut or lean fish -drained
-steaks, cut into l-inch 1 cn (4 ounces) sliced
-pieces -mushrooms, drained
1 md Onion, thinly sliced 1 md Tomato, cut into thin
3 Cloves garlic, finely -wedges
-chopped 2 tb Soy sauce
1 ts Finely chopped gingerroot 1 tb Lemon juice
1 pk (10 ounces) frozen
Cod, pollack and albacore tuna are examples of other
lean fish that would
be delicious substitutes for the halibut.
Heat oil in 10-inch nonstick skillet over medium-high

Potentials, you react to stimuli from outdated concepts. By
re-acting, acting out an attitude over and over, you remain
unconscious of what you’re doing, and that you’re probably
sabotaging whatever it is that you want.
Have you ever opened a bag of potato chips and
unconsciously nibbled on them while watching a movie?
Maybe you’d like to lose weight, but all of a sudden the bag
is empty. Oops! You probably weren’t even hungry, but
you ate them out of habit.

As we encounter a situation, our mind-set greatly affects our outcome. Asking
ourselves the right question can help us to look in the right direction, and so
find the right answer.
1. When meeting someone new - What can I learn from this person?
2. When a situation distresses you - Is this situation mutable (can it be
changed) or is it outside my sphere of influence?
3. When a distressing situation can be changed - What can I do to make this
situation better?
4. When the situation can’t be changed - How can I change the way I see
things/think about this (reframe the situation) so that I will be less
disturbed?
5. When feeling called upon to make a choice between two things or situations -
Is there a good reason why I can’t have/do both?
(This probably should not apply to intimate relationships!)
6. When overwhelmed with anger or other strong feelings - What is the threat

3/4 pound firm white fish fillet
3 T fresh lime juice
1 T olive oil
1/2 t pepper
1/4 t salt
1/8 t chili powder
1/8 t garlic powder
18 large shrimp, peeled and deveined
3 c peeled seeded, coursely chopped tomato
1/2 c chopped yello squash
1/4 c chopped fresh banana peppers or pepperoncini peppers
1/4 c chopped onion
1/4 chopped fresh cilantro
1 T fresh lime juice

FWD: Gradtitude Today

Today I begin the day with gratitude; I know that there is a power in gratitude
that opens the heart and makes me and my life ready for even more blessings. I
take stock of all the facets of my life, and notice that even where I am feeling
challenged, there is a blessing to be thankful for.
Any time I’m being challenged, it’s not a test from the infinite! It’s nothing
more than spirit opening me up so that I may hold more light, reflect spirit
more perfectly, and be made whole. I refuse to look at challenges as punishment,
and I get rid of any ideas that the path will always be fun or pleasurable. I
know that the universe is spiritual, and I put my trust in the spiritual laws of
this universe. I know that under any situation, I can be carried forward in
strength, in grace, and in a clear understanding that even in confusion, Spirit
is present. Even in painful times, the support and comfort of Spirit is right in
there with me.
By seeing in this way, I am able to give thanks in all things, rather than just
the things that are pleasant or easy. And gratitude keeps me open to receive the

DIABETIC DATE NUT CAKE
1/2 c. butter
1 tsp. liquid sweetener
1 1/2 c. diabetic applesauce
2 c. flour
1 c. finely sliced dates
1/2 tsp. cinnamon
1/4 tsp. cloves
1 tsp. soda
1 c. chopped pecans
1 tsp. vanilla
Cream butter; add liquid sweetener and vanilla; mix.
Add egg and applesauce; mix well. Sift together cinnamon,
cloves, soda and flour. Add all dry ingredients to butter
mixture and beat well. Add dates and pecans. Beat until

Inspiration Station …..Frogs…..
A group of frogs were traveling through the woods and two of them fell into a
deep pit. All the other frogs gathered around the pit.
When they saw how deep the pit was, they told the unfortunate frogs they would
never get out. The two frogs ignored the comments and tried to jump up out of
the pit. The other frogs kept telling them to stop, that they were as good as
dead.
Finally, one of the frogs took heed to what the other frogs were saying and
simply gave up. He fell down and died. The other frog continued to jump as hard
as he could.
Once again, the crowd of frogs yelled at him to stop the pain and suffering and
just die. He jumped even harder and finally made it
out.
When he got out, the other frogs asked him, “Why did you continue jumping?
Didn’t you hear us?” The frog explained to them that he was deaf. He thought
