These recipes come from Diabetic Cooking Magazine.
Countr Time Lemon Creamy Frosty
Preparation Time: 5 minutes
1 cup prepared lemonade(I use Crystal Light because of sodium content)
1 cup no-sugar added vanilla ice cream
1/2 cup ice cubes or crushed ice
Place all ingredients in blender container; cover. Blend on high speed about 30
seconds or until thickened and smooth. Serve immediately.
Makes 2 (1 cup) servings

Nutrients per serving; 90 Calories, 4 grams total fat, 11 grams carb.,10 mg.

Potatoes au Gratin
1 lb. baking potatoes

4 tsps. reduced calorie margarine
4 tsps. all-purpose flour
1 1/4 cups fat-free(skim)milk
1/4 tsp. ground nutmeg
1/4 tsp. paprika
Pinch of white pepper
1/2 cup thinly sliced red onion, devided
1/3 cup whole wheat bread crumbs
1 Tbsp. finely chopped red onion
1 Tbsp. grated Parmesan cheese
1. Spray a 4 or 6 quart casserole with nonstick cooking spray; set aside.
2. Place potatoes in large saucepan; add water to cover. Bring to a boil over
high heat. Boil 12 minutes or until potatoes are tender. Drain; let potatoes
stand 10 minutes or until cool enough to handle.
3. Melt margarine in small saucepan over medium heat. Add flour. Cook and
stir 3 minutes or until clumps form. Gradually whisk in milk. Cook 8 minutes
or until sauce thickens, stirring constantly. Remove saucepan from heat. Stir
in nutmeg, paprika and pepper.
4. Preheat oven to 350 degrees. Cut potatoes into thin slices; Arrange half
of potato slices in prepared casserole. Sprinkle with half of onion slices.
Repeat layers. Spoon sauce over potato mixture. Combine bread crumbs, finely
chopped red onion and cheese in small bowl. Sprinkle mixture evenly over sauce.
5. Bake 20 minutes. Let stand 5 minutes before serving. Garnish as desired.
Makes 4 servings

Nutrients Per Serving 178 calories, total fat 3 grams, carb. 33 grams,
cholesterol 2 mg., fiber 2 grams, calories from fat 14%, sat. fat 1 gram,
protein 6 grams, sodium 144 mg.
NOTE: In French, gratin means any dish-topped with cheese or a mixture of bread
crumbs and butter, then heated in oven until browned.
